Předběžná náplň práce
Hlavním cílem práce bude popsat vliv hořkých látek z chmele na intenzitu a charakter hořkosti piva. Komplexní studie bude zahrnovat sledování asociace senzorického vjemu a chemického profilu samotných hořkých látek a jejich interakce (synergizmus, antagonizmus) s ostatními látkami obsaženýmii v pivu, např. aminokyseliny, heterocykly. Chemický profil hořkých látek, kterých je nepřeberné množství (α a β kyseliny, jejich izomery, oxidační a transformační produkty, atd.), se projeví ve výsledné intenzitě a především v charakteru hořkosti piva. Celkový vjem hořkosti je potom daný nejenom jednotlivými zástupci hořkých látek, ale také jejich vzájemným poměrem, hodnotou pH, vzájemnými interakcemi zmiňovaných látek, atd. Komplexní soubory studovaných látek (chemické profily) ve chmelu a v pivu budou získané především pomocí techniky LC-MS, a to jak cílenou, tak i necílenou analýzou. Získaná data budou zpracována vícerozměrnými chemometrickými metodami.

The main aim of this thesis is to describe the effect of bitter compounds from hops on the intensity and the nature of beer bitterness. A complex study will include monitoring of a association between sense perception and chemical profile of bitter compounds alone and their interaction (synergy, antagonism) with other compounds found in beer e.g. amino acids, heterocyclic compounds. The chemical profile of bitter compounds, of which there are plenty (α and β acids and their isomers, oxidational and transformational products, etc.) will manifest to the final intensity and especially on the character of beer bitterness. The overall impression is, then given not only by the individual bitter compounds but also by their ratio, pH value, mutual interactions of mentioned compounds, etc. Complex set of studied compounds (chemical profiles) in beer and hops will be obtained by the means of LC-MS by targeted but also untargeted analysis. Data will be processed by multidimensional chemometric methods.
