Obecně jsou rozděleny na kyselé a alkalické fosfatasy dle jejich pH optima.Byl připraven extrakt z listů Nicotiana tabacum L. a Pissum sativum. Dále se zjistlily rychlostní konstanty fosfatas hrachu a tabáku. Rychlost reakce katalyzované fosfatasou tabáku je 10,0 µmol/min.ml a hrachu 38,0 µmol/min.ml s použitím substrátu pNP – fosfátu. Se substrátem fosfo – L serinem je rychlost reakce katalyzovaná fosfatasou tabáku 1,8 µmol/min.ml a hrachu 0,4 µmol/min.ml.Michaelisova konstanta Km je pro fosfatasu tabáku 1,8 mM a pro fosfatasu hrachu 8,5 mM s použitím pNP – fosfátu jako substrát. Se substrátem fosfo – L serinem je Km fosfatasy tabáku a hrachu stejná - 4,0 mM.pH optimum fosfatasy hrachu je 5,0 při použítí pNP – fosfátu jako substrát a pH 6,0 se substrátem fosfo – L serinem. Hodnota pH optima fosfatasy tabáku je 5,4 s použitím pNP – fosfátu a pH 7,0 s fosfo – L serinem.Teplotní optimum fosfatasy hrachu je 60 ºC a fosfatasy tabáku 55 ºC.
