Analytické techniky využívající hmotnostní spektrometrii ve spojení s kapalinovou chromatografií nejsou v oblasti analýzy piva a pivovarských surovin příliš rozšířené. Otvírají se tím široké možnosti při využití této techniky, zejména pokud se použije hmotnostní spektrometr s vysokým rozlišením. Cílem této práce bude vyvinout a aplikovat metodu pro stanovení biologicky aktivních látek s potenciálně pozitivním zdravotními účinky a také metodu pro stanovení organických kontaminantů (zejména reziduí pesticidů) v pivovarských surovinách, chmelu a sladu, jenž naopak mohou na zdraví konzumentů působit negativně. Další kapitola se bude věnovat identifikaci a sledování látek s vlivem na organoleptické vlastnosti piva.
Preliminary scope of work in English
In analysis of beer and brewer raw materials, analytical methods combining high performance liquid chromatography and mass spectrometry are utilized seldom. The research area focused on analysis of beer and brewer raw materials provides a wide range of opportunities to implement high resolution mass spectrometry as a powerful analytical tool. The three main goals of this Ph.D. thesis are: 1. analytical method´s development and its application to analysis of biologically active compounds showing potential health benefits; 2. analysis of harmful organic pollutants, mainly pesticides residues, in brewer raw materials, hop and malt; 3. identification of compounds that affect the organoleptic properties of beer.
